Sausage and Tortellini Soup Recipe

Hi everyone! It’s been a long, long, LONG time since I’ve posted a recipe. My weight loss journey is… well, let’s just say it’s stalled. But I’m determined to start eating healthier. This soup isn’t the MOST healthy soup you can make, but it’s a start. And it’s definitely delicious.

Sausage and Tortellini Soup:

1 small can of tomato soup

1 can of tomato Parmesan soup (I used Progresso)

2 small cans of water

1 15 oz can of diced tomatoes

1 can of cannellini beans, drained

2 cups of tortellini

1 pound of sausage (I used venison Italian sausage)

1 small onion

Any other veggies of your choice. I used a frozen mix.

Brown sausage and drain, if necessary. Brown onions and saute any vegetables.

Add the rest of the ingredients, except the tortellini, and simmer for 30 minutes.

Add tortellini and simmer for 15 minutes.

That’s it! You’re done!

This is a great winter recipe and can be adjusted to feed as many people as you’d like. The leftovers taste great, too!

I’ll confess that I added a bit more than 2 cups of tortellini to mine. Shhh!
